Bake in the preheated oven until golden and crispy, about 6 minutes per side. Cut tails off 4 of the tempura shrimp. Cover a bamboo sushi rolling mat with plastic wrap.

Step 2: Make Dragon Rolls. Cut the nori sheets into halves, and place one piece on top of the bamboo mat wrapped with plastic wrap, the shiny side facing down. Take 3/4 cup of the seasoned sushi rice and spread it over the nori sheet evenly. Flip everything, and let the rice face down.

Seperate the avocado into sets of ~3 slices each. Top the roll by alternating a set of avocado slices and then a piece of eel, slightly overlapping, until the whole roll is covered. (click for guide) Place the roll on a cutting board and grab your sharpest knife. Optionally, cover the roll with plastic cling wrap.

To Roll the Sushi. Make the tezu (vinegared water) by combining ¼ cup water and 2 tsp rice vinegar (unseasoned) in a small bowl. Next, line a bamboo mat with plastic wrap. Place a half nori sheet on top, shiny side down. Then, dip your hands in the tezu and spread ¾ cup (110 g) sushi rice on the nori sheet.

Spread half of the rice on the sheet. Add the other ingredients. Flip the nori so the rice is on the bottom. Add 3 to 4 pieces of shrimp to the long edge, followed by the cucumber and tobiko. Roll the sushi. Start from the bottom edge, and gently pinch and press the roll with the mat.

09 - Place the Avocado on top of the roll, using the knife. 10 - Using the wrapped bamboo mat squeeze the roll until the Avocado slices wrap around the Sushi. 11 - Remove the plastic wrap. 12 - Cut the roll into 8 pieces with knife. ( Clean knife with wet towel after each cut ) 13 - Put Tobiko on top and Mayo.

This roll is a great option that doesn't contain any raw fish! The "Dragon Roll" name is a somewhat standard name for this very common sushi roll.
