This ice cream is a warm-spring-day homage to charoset, specifically the first ever recorded recipe, from an Ancient Babylonian prayer book. The recipe, which was known as "halek" called for mixing walnuts and sesame with softened dates. We love the combo of rich tahini ice cream, the caramel-like date syrup swirl, and toasted walnut chunks.

Since as early as 2008, Ben & Jerry's in Israel has been producing a Kosher for Passover Charoset flavored ice cream. Charoset is one of the food items traditionally placed on seder plates by Jews around the world. The Ashkenazi variety is typically a paste made up of apples, nuts, wine and cinnamon meant to represent the mortar that the Jews.

Ben & Jerry's Israeli branch has given condiment a modern spin, releasing a special Passover charoset ice cream that combines flavors found in traditional Ashkenazi and Sephardic recipes.

In batches, fold the whipped cream into the condensed milk mixture, until fully combined. Pour half of the ice cream mixture into a freezer-safe container (I used a loaf pan and sealed it with plastic wrap and tinfoil), then add the charoset mixture (reserving 1/4 cup for serving). Pour the rest of the cream over the charoset.

To make the ice cream base, heat cream and milk together, and whisk in sugar and skim milk powder. In a bowl, temper egg yolks by adding a few teaspoons of warm milk and stirring, then add the yolks to the milk mixture in the saucepan. Stir until custard reaches 165° F. Remove from heat and pour mixture through a strainer into a Pyrex dish.

Charoset is a chunky slaw made from crisp sweet apples, toasted walnuts, sweet wine, honey and cinnamon so of course that sounds like it would be amazing with ice cream. 2021 and we finally did it. There was always something exciting about the preparations for Passover week.

Keeping kosher for Passover may be a little more bearable this year, at least in Israel. The mensches over at Ben and Jerry's released a charoset-flavored ice cream that, thankfully, has all the credentials to be eaten over the Jewish holiday. For those who are unfamiliar, charoset is a traditional dish consumed at the Passover Seder.
