Hoska is a delightful Christmas bread. In a large mixing bowl, dissolve yeast in warm water with a pinch of sugar. Allow to develop until foamy, about 15 minutes. Combine milk, butter, sugar and salt, and heat until sugar is dissolved and butter is melted; cool to lukewarm. Add milk mixture, mace, coriander, and lemon zest to yeast and stir.
