I like a moderate challange so I usually play random map with the AIs turned a notch or two down from endless difficulty. I leave everything else on normal. It just feels 'right' compared to playing on tweaked settings. If you want a B5 vibe, I recommend playing the Unfallen. You can force the AI into peace with you then try to negotiate.
