Here is a family favorite recipe for quick stuffed peppers cooked in the microwave. I'm not a fan of green peppers so I use red, orange or yellow depending on what's on sale. This recipe is so fast to prepare. It's perfect for nights when you'd rather just hit the drive-thru! 4-5 large peppers (red, yellow, orange or green)
