Simple, and delicious! Awwami Recip by Genius Kitchen Aish el saraya - The Arabic version of bread pudding. Made by layering bread at the bottom of the dish, covering it with a sweet syrup, then adding cream, and adding topping it with garnishes like crumbled pistachios.

Drizzle all over with homemade simple syrup and sprinkle with the crushed pistachios. To make the syrup, just combine 2 cups of white sugar with 2 cups of water. Stir together and bring to a boil then allow to simmer for 7 minutes until just slightly thickened. Make sure it is warm when pouring on the hot knafeh.

This dessert goes all the way back to Byzantine times, so around and about the 12th century. It made an appearance in the oldest known Arabic cookbook, translated as The Book of Dishes, as a typical dessert.. This recipe, with it's Turkish roots, is made with simple ingredients which is indicative of an ancient method of cooking.

Knafeh (or Kunafa) is a delicious Middle Eastern dessert with layered crispy pastry and sweet cheese soaked in syrup, and is believed to have originated centuries ago in Nablus, a city in Palestine, where it was made using local Nabulsi cheese. It is crunchy on the outside, cheesy and gooey on the inside, and overall just delicious!

Also known as Knafeh Nabulsieh, Palestinian Knafeh Na'ameh is a regional dessert that can be found in the fanciest restaurants as well as tiny street kiosks. In its authentic form, it has a top-bottom crust made with farek or a semolina and flour-based dough. The middle layer is filled with a combination of Ackawi, Nabulsi, and mozzarella cheese.

Preheat the oven to 180°C fan. Grease well and line the base and sides of a 30 x 20cm baking tray and set aside. If making the date filling: put all the ingredients for the filling into a medium saucepan and place on a low heat. Heat for 8 minutes, stirring a few times, to form a mushy, sticky paste.

Spread the ghee and food coloring into the pan evenly. Take about ¾ of the knafeh dough and spread it evenly across the pan.
