Boil a pot of water and cook the pasta according to package directions. Reserve some of the pasta water prior to draining it. Meanwhile, cook the pancetta in a skillet until crispy, and then add in the garlic, followed by the brie, lemon juice, and about 1/4 cup of the hot starchy water. Toss until the sauce is smooth, then add in the spinach.

Add 1 teaspoon red pepper flakes and stir to combine. When the pasta is ready, reserve 1 cup of the pasta water. Drain the pasta and return to the skillet. Add the brie, 1 teaspoon kosher salt, and 1/2 cup of the pasta water. Cook over medium heat and vigorously toss with tongs until the brie melts and the sauce coats the pasta.
