Add 1″-1 1/2″ of oil to your frying pan and heat it to 325 degrees. Carefully add 2 sprigs of rosemary and allow it to fry for 1 minute. Remove it to a paper towel lined baking rack. Working in batches, carefully add a single layer of potato slices, careful not to crowd them.

Turn heat on medium-high. The oil is ready when a thermometer reads 350 degrees and the garlic cloves have browned slightly and rosemary has become crispy.
