Vivian Howard's Tomato Pie Adapted from Deep Run Roots by Vivian Howard and a version from Saveur. Makes one 9-inch pie. I use my pie dough recipe here (see link below). Other than that, no changes. The recipe in the cookbook doesn't finish the pie with sliced tomatoes, but the Saveur adaptation does; I've used that adaptation below.


Southern Tomato Pie Recipe Kitchn Kitchn

Preheat oven to 350 degrees F. Place the tomatoes in a colander in the sink in a single layer. Sprinkle with salt and allow them to rest for 10 minutes. Use a paper towel to pat-dry the tomatoes and make sure most of the excess juice is out. (You don't want wet (juicy) tomatoes or your pie will turn out soggy).

Vivian's Tomato Pie Tomato Pie must be a southern thing. It wasn't until I read the recipe in Deep Run Roots by Southern Chef, Vivian Howard that I had ever heard of it. The pie consists of roasted and fresh tomatoes. I used several varieties of heirloom tomatoes to give contrast in texture and taste.

Spread mixture in an even layer across the bottom of your pie crust. Dollop the cheese topping on the pie carefully spreading it out, trying not to mix it with the tomatoes below. Bake the pie at 375 degrees on the top rack of the oven for 30+ minutes until the top is lightly browned. Cool to room temp before serving, or chill completely.
