The star of this show is za'atar, a Mediterranean spice made from herbs, sesame seeds and sumac. Sumac is a tangy, bright red spice reminiscent of lemon.. You can make your own za'atar blend at home, or buy a pre-made mix at a grocery store or market.

Instructions: Start by washing and cutting the potatoes into thin fries. Then, combine the Za'atar spice mix, olive oil, and salt in a large bowl and toss the potatoes until they're well coated. Arrange the fries in a single layer on a baking sheet lined with parchment paper and bake for 25-30 minutes or until they're golden brown and crispy.
