In a pot/saucepan, bring the water to a boil. Pour the sugar in the water, and stir until dissolved. Remove from the heat and add the tea bags. Leave them to steep for about 8-10 minutes. Stir in the pineapple juice. Place into a pitcher, and allow to cool slightly at room temperature before refrigerating.

Method. Put the sugar, mint and green tea in a jug and add 500ml boiling water. Allow the teabag to infuse for 5 mins before removing (see tip above if serving 4). Cool fully. Strain the mint tea into a food processor, discard the mint and add the pineapple and lemon juice. Blend until smooth, then pass through a sieve into a jug.
